Pumpkin Risotto with Toasted Pine Nuts and Roasted Garlic Risotto! Oh my! This is my new favourite! Arborio rice, dried pumpkin, toasted pine nuts, roasted garlic and parmesan cheese create an oh-so-deliciously comforting dish. Try it on its own as a main or have it alongside your favourite veggies or protein. Just add water, heat and the occasional stir and it’s ready in 16 minutes. Yummo.
You can even use to make into easy delicious arancini balls!

Preservative free, gluten free, and suitable for vegetarians
How Much?
300g serves 4 as a side dish.
Single full serve is 150g (makes 450g when cooked)
Cooking Instructions:
For each 150g serve (450g when cooked) place:
1/2 tbsp olive oil and 150g risotto mix into a pan with 400ml of boiling water.
Cover and bring to a boil, stirring occasionally. Reduce to a simmer, cover for 15 min stirring occasionally. Remove from heat, cover and let sit for 5 min. Stir well before serving.
To "revamp" once cooked stir in boiling water to desired consistency and reheat.
Please refrigerate after cooking and use within 48hrs.

Arborio Rice, pumpkin (8%), parmesan cheese, carrot, stock powder, onion, pine nuts (1%) , garlic, murray river salt, parsley, sage, rosated garlic (1.5%), tumeric, chives, black pepper
